Vegetarian Lentejas Charras

Cook the Lentils:

1. In a large pot, combine the lentils and 7 cups of water.
2. Bring to a boil, then reduce heat and simmer until tender.
3. Once done, set aside with their cooking broth.

Prepare the Mushrooms:

1. While the lentils cook, break the mushrooms into nugget-sized pieces using your fingers.
2. Heat a bit of oil in a large pan over medium-high heat.
3. Sauté the mushrooms until golden brown.
4. (Tip: Press them down gently with a small plate or spatula to encourage browning.)
5. Lightly salt, then remove from the pan and set aside.

Brown the Sausage:

1. In the same pan, add the sliced vegetarian sausage and sauté until browned on both sides.
2. Remove and set aside with the mushrooms.

Combine and Sauté:

1. Return the browned mushrooms and sausage to the pan.
2. Add the diced tomato, onion, jalapeño, and a good pinch of salt.
3. Sauté everything together for about 4 minutes, until fragrant and softened.

Add Lentils and Milk:

1. Pour in the cooked lentils along with their broth.
2. Stir in the milk and mix well.

Finish with Cilantro:

1. Add the washed cilantro on top, cover with a lid, and reduce to the lowest heat.
2. Let it gently simmer for 5 minutes so the flavors meld together.
