Healthy Edible Cookie Dough Truffles

1. In a large mixing bowl, combine the almond flour, nut butter, maple syrup, vanilla, salt, optional ground flaxseed, and 1/2 cup of the chocolate chips.
2. Mix until a dough forms. Using dry, clean hands take a spoonful of the dough and roll into 16 balls and place them on a parchment-lined plate or tray.
3. Add the remaining chocolate chips to a plate. Dunk just the tops of each ball into the chocolate chips and add a sprinkle of salt if desired to each.
4. Place them back on the parchment-lined tray. Freeze for 30 minutes then store in an airtight container in the freezer for up to 3 weeks. When ready to enjoy I like setting it on a plate for 5-10 minutes to soften first!
