Vegan Torta

Pickled red onions:

Thinly slice red onions and place in a jar. Pour white or red vinegar over onions, ensuring all are submerged. Seal the jar and let sit for 1 hour.

Oyster mushrooms:

In a medium-sized bowl, combine avocado oil, tamari, garlic powder, salt, and pepper. Whisk together. Heat a large pan over medium-to-high heat. Dunk each mushroom into the mixture and then place onto the hot pan. Cook for 2-3 minutes on each side. Once all mushrooms are on the pan, pour any remaining sauce over them.

Assemble the torta:

Heat refried beans in a bowl. Cut and toast the torta bread. Slice avocado, lettuce, and tomato. Once all ingredients are ready, grab the bottom piece of the bread and spread a generous layer of refried beans, followed by oyster mushrooms, tomato, avocado, lettuce, cilantro, and pickled onions.
