VEGAN PUPUSAS!

1. For the Curtido, finely chop cabbage, onion and grate carrots. Then pour over hot water, vinegar, add dried oregano and salt. Mix with your hands or a wooden spoon. Cover and refrigerate for about an hour.
2. In a bowl, combine the corn masa flour and salt. Mix then add in water in thirds, mixing with a wooden spoon in between. Once all the water is in, use your hands to form dough. Let dough rest and meanwhile prepare your fillings.
3. For the fillings, use sliced vegan cheese and cut into small squares. Prepare quick refried beans.
4. Once ready to assemble, grab about a golf ball size amount of dough and roll into a ball. Using your thumbs, press in the center then fill with a bit of beans and a couple squares of vegan cheese. Close it up like a taco then roll it back into a ball then flatten between your hands.
5. To a pan, add 1-2 tbsp oil and pan fry on both sides for a couple minutes until golden.
6. Enjoy with the Curtido!
