VEGAN CHORIZO PAPA CHEESY TACOS

Soyrizo Potatoes:

1. You can steam chopped potatoes or Place chopped potatoes in a deep pan or pot & cover with water. Bring to a boil for 8-12 minutes or until potatoes are tender. Drain the potatoes, then add 1 tbsp oil to the pan, return the potatoes to the pan and cook until potatoes turn slightly golden. Season with salt and pepper. Add soyrizo carefully incorporating the soyrizo and potatoes. Cook for an additional 7-10 minutes. Taste and adjust seasonings to your liking.

Make your quesadillas:

*Add a tiny bit of oil to a pan if you want a crispy texture*. Add cheese to one side and once it is heated enough to fold, fold over and press down to allow cheese to melt… flip after 1 minute or so and remove from pan once cheese is melty. Add chorizo and potatoes to each quesadilla…you can return it back to heat through but I kept it as is! Add avocado slices & enjoy!
