VEGAN BUFFALO CAULIFLOWER BISCUIT SLIDERS

For the Vegan Biscuits:

1. Preheat oven to 475°F. Cut cold vegan butter into small cubes. In a medium bowl, toss together butter and all-purpose flour quickly with your hands or a fork, breaking the butter into the flour until it resembles wet sand. Add baking powder and 1.5 tsp salt.
2. Make a well in the center of the mixture. Add 1 cup almond milk and stir about 15 times until just combined. The dough will be sticky.
3. Place the dough onto a lightly floured surface. Lightly sprinkle flour over the top of the dough. Using a lightly floured rolling pin, roll the dough into a 3/4-inch-thick rectangle. Fold the dough in half so the short ends meet. Repeat the rolling and folding process 4 more times.
4. Roll the dough to 1/2-inch thickness. Cut with a 2 1/2-inch floured round cutter, reshaping scraps and flouring as needed to get 10-12 biscuits.
5. Place dough rounds on a baking sheet lined with parchment paper. Brush with melted vegan butter then bake for 15 minutes or until lightly browned.

For the Buffalo Cauliflower Wings:

1. Preheat oven to 400°F and line two baking sheets with parchment paper.
2. Prepare the batter: In a bowl, mix 1 cup rice flour, 1 tsp garlic powder, 1 tsp onion powder, and 1/4 tsp salt. Then add 1 1/2 cups unsweetened almond milk. Stir with a whisk or fork until well combined.
3. Add cauliflower florets one at a time to the batter to coat thoroughly. Shake off any excess batter and place the coated florets on the baking sheets, ensuring about 1 inch of space between each piece. Bake for 25 minutes.
4. While the cauliflower bakes, prepare the buffalo sauce. In a bowl, combine 1 cup Frank’s red hot sauce with 2 tbsp vegan butter. Microwave for 1 minute or until the butter is melted and the sauce is warm.
5. Once the cauliflower wings have baked for 25 minutes, remove them from the oven. Dip each cauliflower wing into the buffalo sauce, then place it back onto the baking sheet. Bake for an additional 6 minutes.

To Assemble Sliders:

6. Slice the vegan biscuits in half. Fill each biscuit with a buffalo cauliflower wing. Add your choice of vegan mayo, vegan ranch, or vegan garlic aioli, and a few sliced pickles. Enjoy!
