Upgrade Your Vegetables

1. In a pan over medium heat, add a couple tablespoons of high heat oil, just enough to make a thin, even layer at the bottom of your pan.
2. Once hot, add an equal layer of your favorite vegetables, ensuring they are not overlapping, and cook for a couple minutes on each side, undisturbed, until golden.
3. Then, add in 1 tablespoon of butter and a couple tablespoons of nutritional yeast and mix everything together.
4. Cook the vegetables in batches until all are done.
5. Serve with fresh herbs like cilantro, a squeeze of fresh lime juice, avocado, more salt if desired, and any sauce of choice (like tahini sauce)!
