30 mins prepServes 10
Easy and delicious Tofu Avocado Kabobs featuring creamy California avocados and a savory-sweet sauce, perfect for grilling. If you haven't tried grilling avocados, this recipe is a must-try for a nice smoky flavor!
1. If using wooden skewers, soak them in water for 15 minutes or until ready for assembling.
2. Prepare the sauce by combining all sauce ingredients in a bowl and whisk until well combined.
3. Prepare all your kabob ingredients: thickly slice the avocados, remove tofu from its package (wrap in a paper towel and gently squeeze for 10 seconds) then cut into cubes, halve the Brussel sprouts, cut the bottom 1-2 inches off asparagus then cut again into 2-inch pieces, thickly slice jalapeños, bell peppers, and zucchini.
4. Add the cubed tofu to the sauce. Then steam the Brussel sprouts for 3 minutes, and then add in asparagus and let steam for 1-2 minutes. Remove the Brussel sprouts from the steamer, add them to the sauce, and begin to assemble kabobs.
5. Grab your skewer and add all your ingredients, alternating as you go until the skewer is filled up. Place the skewers onto a tray and pour the extra sauce over the top of the kabobs.
6. Prepare your grill or stove top grill pan. Wait until it is very hot and add kabobs onto the grill. Cook for 2-4 minutes on each side until veggies are cooked. Place on a serving dish and sprinkle over cilantro and flakey sea salt, then enjoy!
