Pistachio Horchata

1. In a bowl combine rice, pistachios & cinnamon stick. Cover with water, making sure to fully Submerge the ingredients. Let it soak for 6 hours or over night.
2. Drain the water then add the ingredients to a blender then add 4 cups fresh filtered water. Blend on high for 1-2 minutes.
3. Place a fine mesh strainer in a bowl or pitcher OR I recommend you use a nut milk bag for an extra smooth consistency. Pour the liquid through. If using a mesh strainer, pour the liquid back into the blender then back into the pitcher a couple times (using the fine mesh strainer) until the liquid has no graininess. If using the nut milk bag, it will only take one pour.
4. Finally pour the liquid back into the blender once more, add sweetened condensed milk, 2 cups milk, a pinch of salt & an optional splash of vanilla. Blend on high then pour into a pitcher with lots of ice! Serve with a cinnamon stick and a couple pistachios for garnish.
