PECAN HORCHATA w/ Sweet Loren's Cookies

1. To a large bowl add rice, cinnamon stick and pecans. Cover with 3 cups filtered water. Cover and soak in the fridge overnight.
2. Add all the contents in the bowl (including the water), sweetener of choice, ¼ tsp salt and blend on high for 1 minute, then strain through a nut milk bag or through a fine mesh strainer into a large pitcher. If using a mesh strainer pour it through 2-4 times for a smooth horchata.
3. Once strained add 1-3 cups of additional filtered water. Add less water for more creamy horchata and more for a more refreshing agua de horchata.
4. Serve chilled or over ice & enjoy with cookies!
