Lactation Cookies

1. In a large bowl add ground flax and water. Mix and let it sit for 5 minutes. (If you need to make your oat flour from scratch, simply add a heaping 1 cup rolled oats to a blender and blend on high for 1 minute or until flour is formed.)
2. To the bowl add almond butter, coconut oil, maple syrup and coconut sugar. Mix to combine.
3. Add the remaining ingredients to the wet mixture and mix until cookie dough is formed. Add the dough to the fridge and preheat oven to 350°F.
4. Roll a heaping spoonful of dough in between your hands and then place on cookie sheet with 1-2 inches between each. Slightly flatten each ball of cookie dough. Bake in preheated oven for 14 -16 minutes or until the edges are just barely browned.
5. Once removed from oven let them cool completely before transferring to a plate or Tupperware.
