(lactation) Cookie Granola 🍪

1. In a large bowl combine the ground flax with 6 tbsp of water. Mix and let it sit for 10 minutes. In the meantime, preheat oven to 315 degrees F.
2. To the bowl with the flax seed mixture, add in almond butter, melted coconut oil, pure maple syrup, coconut sugar, brewers yeast and vanilla extract. Mix well to combine. Then, add in the oat flour, almond flour, baking powder, cinnamon, a generous pinch of salt and 2 cups of the oats. Mix to combine then add in the last cup of oats. Mix again to combine.
3. Line a large cookie tray with parchment paper then dump the granola mixture to the tray and using a spatula or your hands spread it then press it down into the baking tray to be an even thin layer. If you need to use two baking sheets to not over crowd the tray that is just fine!
5. Let the granola fully cool on your counter. About 1 full hour. Store in a glass container or jar sealed tightly for best freshness.
