HUEVOS A LA MEXICANA Vegan Style!

1. In a pan over medium/low heat, add 1 tbsp of oil or vegan butter, then sauté onion, garlic, tomato, and Serrano for 5-7 minutes. Season with salt and pepper.
2. Add the 'vegan just egg' (or crumbled soft tofu) to a bowl and add garlic powder, dried chives, a pinch of black salt (or regular sea salt), and black pepper. Mix to combine. (If using tofu, make sure to season well with the same seasonings + 1/2-1 tsp ground turmeric!)
3. Once the tomato mixture has cooked for 6-7 minutes, move the mixture to the edges, and in the center of the pan add a bit more oil or vegan butter. Once melted, add in the vegan egg mixture (or seasoned tofu). Cook on low heat, slowly moving it all around until cooked.
4. Assemble your tacos with cooked/warm tortillas, adding avocado, salsa, beans, nopales, and whatever else you want!
