Healthy Vegan Vodka Pasta

1. In a medium pan, add in diced onions and cook until lightly browned, about 5 minutes. Stir in garlic, tomato paste, and crushed red pepper and cook until fragrant, about 1 minute.
2. Remove pan from heat and stir in whole tomatoes and vodka. Return to heat and simmer until alcohol cooks off… about 7 to 10 minutes, stirring occasionally.
3. Transfer sauce to a blender adding 1 cup filtered water & 1 cup raw soaked cashews and puree until smooth. Pour back into saucepan.
4. Heat until warmed through, about 7-10 minutes on low heat. Season with salt and pepper to taste.
5. Meanwhile cook your pasta according to the directions on the package. (Red lentil penne pasta was used as an example.)
6. Once the pasta is cooked and your sauce is heated through, pour your pasta into the sauce, mix and top it off with vegan parmesan.
