GORDITAS w/ Beyond Steak!

1. Make the masa for Gorditas. In a bowl combine masa harina, warm water, salt and baking powder. Mix then gradually add warm water while you mix to combine with your hands. Grab a golf sized ball of masa and plaster it in your hands to make a thick tortilla or use a tortilla press. Should be about a little less than half an inch thick.
2. Add 6 tablespoons oil to a pan over medium heat. Once hot add the thick tortilla. Fry for 1-2 minutes on each side or until golden. Transfer to a plate lined with paper towels to soak up excess oils.
3. To a separate large pan over medium heat add 2 tablespoons neutral oil. Once hot add in the beyond steak and cook for 5 minutes on one side, undisturbed to allow crispiness to develop then move around and cook for an additional 5 minutes. Lightly salt, then add a squeeze of fresh lime juice and turn off heat.
4. Using the tip of your knife, cut a slit in the Gordita to make a pocket. Smother beans, then add Beyond Steak, lettuce, a drizzle of vegan sour cream, salsa, avocado, cilantro, radish and a squeeze of lime!
