Fideo Seco!

1. Heat broth either in the microwave or over stove top just until simmering then set aside. 
2. To a pan over medium heat add 1 tbsp oil, once hot, add guajillo chili peppers and cook for 15-20 seconds on each side. They will darken quickly. 
3. Remove the Chilis, add to a bowl and cover with 1/2 cup hot broth and set to the side.
4. Return to the pan, add 1 more tbsp oil then add in onion, garlic and tomato. Cook for 2-3 minutes on each side or until charred and softened. Transfer to a blender followed by the chilis in broth and blend in high until smooth. 
5. Return to the pan, bring to medium heat, add 1-2 more tbsp oil then add in the noodles and cook for 2-4 minutes continuously moving around and stirring the noodles until you reach a deep golden color. Lower the heat, Add in the sauce mix, then add in the remaining 1 cup of broth. Simmer for 10-14 minutes until the noodles are cooked. Season with salt to taste.
6. Serve with avocado, cilantro, crema, cheese and enjoy!
