Instructions

Add a couple of tbsp oil to a large pan over medium heat. Once hot, add in onion and guajillo chile and saute for 2-3 minutes. Then add in garlic and saute for 2 minutes. Season lightly with a pinch of salt, then remove the chile & discard. Then add in chorizo, break it apart with a wooden spoon and cook for 5-7 minutes or until it's deepened in color. Then add in the beans (along with 1/2 cup of cooking liquid or vegetable broth) and mash. Add a pinch of salt, taste and add more salt to taste. You can add about 1/3 cup of cashew crema to make them creamier, or leave it out, or add regular crema or sour cream.
