Batch Chai

Using a mortar and pestle, mash all the whole spices. Add them to a pot over medium heat and continuously stir around, letting the spices toast for about 10 seconds. Add 3 cups water, ginger, and any additional ground spices. Bring the mixture to a hard simmer. Add in your sweetener of choice, mix, then add in 4 cups milk. Bring to a hard simmer again, then add in the black tea, a tiny pinch of salt, and optional pumpkin puree. Mix, then turn off the heat and let it steep for 5 minutes. Strain and enjoy.
