Instructions

Prepare the masa by combining the instant corn masa flour with 1 1/2 cups warm water. Whisk well until smooth, or blend in a blender.

In a pot, add 5 cups of water. (If you choose to use milk, only add 2 1/2 cups of water at this stage and reserve 2 1/2 cups of milk for later).

Add the cinnamon stick, whole cloves, and piloncillo to the pot. Bring the mixture to a simmer, then add the Mexican chocolate, breaking it up with a wooden spoon. If you are adding milk, now is the time to add the 2 1/2 cups of milk. Let the mixture simmer for 3-4 minutes.

Lastly, add the prepared masa and water mixture through a strainer into the pot to ensure smoothness. Mix everything to combine and continue to simmer on low heat. Whisk well to prevent lumps. Taste and adjust sweetness or consistency to your liking.
